Downfall Toffee Apple Cake

A tasty Autumnal treat, perfect for making use of those falling apples!

Ingredients: 
2 eating apples - downfalls off the tree
Low calorie cooking spray
100g cooking margarine
175g light brown muscovado sugar
2 eggs, separated
200g self raising flour
1 tsp baking powder
½ tsp ground cinnamon
125g pot of low fat yogurt
3 toffees
1 glace cherry (optional)
Cooking Method: 
  • Heat oven to 180C/160C fan/gas 4.
  • Peel and slice the apples, spritz with low calorie cooking spray and place in the over while it heats.
  • Put the margarine and sugar in a bowl and beat until light and creamy. Add the egg yolks and mix well
  • Whisk the egg whites until they are light and frothy, fold into the mixture
  • Add the flour, baking powder, cinnamon and yogurt in two goes, alternating between dry and wet ingredients.
  • When combined, stir through the cooked apples, setting aside enough to top.
  • Line a cake tin with baking paper. Spoon in the cake mixture, smooth over the top with a spoon
  • Cook in the oven for 50 mins – 1 hr or until a skewer inserted into the cake comes out clean. Leave to cool in the tin for 10 mins, then turn out onto a baking rack, remove paper and cool.
  • Decorate the top of the cake with the remaining apple slices and glace cherry melt the toffees in a saucepan, and when cool enough to manage spoon the toffee over the apples.
